A Cretan salad with avocado cucumber onions and grilled Aegina pistachios with orange vinaigrette dressing
Ingredients for 2 persons.
1 roman lettuce
2 medium ripe tomatoes
1 cucumber
1 dry onion
2 ripe avocado
2 oranges
1 lime
50 gr. Aegina pistachios unsalted Extra virgin olive oil
Salt and pepper
1 coffee spoon of honey.
Wash and dry all the vegetables.
Cut tomatoes, cucumber, onions and avocado into small dice. Cut roman lettuce with your hands.
Roast the pistachios for 3 minutes and then chop them.
Squeeze the lime and 1 orange to get the juice.
Make the orange vinaigrette
1 shot of lime and orange juice
3 shots of organic olive oil.
A spoonful of honey.
Salt and pepper.
Mix all the ingredients well, starting with the honey and juice, add salt and pepper, and finish with the organic olive oil.
Remove the skin from the second orange, and add its pulp and chopped pistachios to the salad.
Mix all the vegetables with the orange vinaigrette.
