A Cretan salad with avocado cucumber onions and grilled Aegina pistachios with orange vinaigrette dressing
Ingredients for 2 persons.
1 roman lettuce
2 medium ripe tomatoes
1 dry onion
2 ripe avocado
50 gr. Aegina pistachios unsalted Extra virgin olive oil
Salt and pepper
1 coffee spoon of honey.
Wash and dry all the vegetables.
Cut tomatoes, cucumber, onions and avocado, in small dices. Cut roman lettuce with your hands.
Roast the pistachios for 3 minutes and then chop them.
Squizz the lime and 1 orange to get the juice.
Make the orange vinaigrette
1 shot of lime and orange juice
3 shots of organic olive oil.
I spoonful of honey.
Salt and pepper.
Mix well all the ingredients starting with the honey and the juice, add salt and pepper, and finish with the organic olive oil.
Take out the skin of the second orange, and add in the salad the pulpe of the orange and the chopped pistachios.
Mix all the vegetables with the orange vinaigrette.
